How to Load a Mini Chocolate Grinder | Ep.30 | Craft Chocolate TV

In this finale episode of season 3 we demonstrate how to make 70% dark chocolate in premier refiners (aka small grinders aka small melangers). While the type of small grinder that you have doesn't matter much, the way you load them does. Things like having the right tools, knowing how to operate your grinder & loading ingredients at the correct time, will all improve the end result of your chocolate. This is how we started making chocolate here at Manoa Chocolate but we don't recommend doing this. These small grinders are a great way to learn but not a great way to start a bean-to-bar business. 10 years later they are still useful for small-batch testing.
