Sadly nothing story wise changes between if you win or lose, but you gain a big boost in EXP and obtain a rare Diamond Ring, which will boost the wearer's light resistance greatly.

So, all in all it's actually not worth it to win against the Don unless you're on a secondary playthrough and plan on doing all the post game stuff.
