I hadn’t made pizza dough from scratch for a long while but I don’t remember it being this hard. I wished he was here then as he loved working with flour and doughs. I was sadder when Mr Rana’s beloved pizza stone couldn’t fit in our new oven. It reminded me that he is not here. He is no longer here to share or fix our problems. Now this is mine and Ronan’s life journey 🥺🥺 I thought the pizza would surely flop that night but it worked out in the end.

As for me, I am always OK but I am not who I was. But thank you for sticking around as always 🌻

Cauliflower Loaded Pizza Dough:

1 tsp instant dry yeast
⁠1 tsp sugar
⁠about 1/2 cup lukewarm water. Use warmed tap water which will still contain some bacteria which will help the yeast work faster. If the yeast is active, it will start to foam within seconds and by 5-7mins, it should be ready for our use.
⁠2 cups grated cauliflower
⁠1 tsp salt
⁠1.5 tsp avocado or olive oil
⁠4 cups bread flour (in this video, I used 3 cups before the 1st round of proofing and 1 cup before 2nd round of proofing)
the longer you proof the dough, the better the dough will rise
⁠my dough was proofed for 3hrs at first and another for another 1hr later on.
⁠my dough mixture yielded 4 pizza doughs; we had 2 pizzas on the first day of making the dough and the other 2, I rolled them into round balls, wrapped them with cling wrap and froze them. Once thawed, the pizza doughs will be ready to use.

Toppings for pizzas:

ready made pasta sauce
⁠shredded mozzarella cheese
burrata and mozzarella balls
⁠figs
⁠fresh tomatoes
⁠fresh basil
