Ingredients

Boneless Chicken - 1/2 Kg
Ginger Garlic Paste - 2 Tsp
Beans - 1/2 Cup Finely Chopped
Carrot - 1/2 Cup Finely Chopped
Green Chilli - 3 Nos Finely Chopped
Spring Onion
Chilli Powder - 1 1/2 Tsp
Garam Masala - 1 Tsp
Cumin Powder - 1 Tsp
Pepper - 1/2 Tsp
Water - 1/4 Cup
Unsalted Butter - 2 Tbsp
Maida - 2 Tbsp
Boiled Milk - 3/4 Cup
Salt
Egg - 2 Nos
Bread Crumbs

Method:

1. Take the boneless chicken pieces in a pressure cooker. Add ginger garlic paste, pepper powder, salt and water to it. Mix it all well.
2. Cook the chicken for 3 whistles on a medium low flame and then separate the chicken pieces from the stock.
3. Cool the chicken pieces completely and then shred them into small bits. Keep it aside.
4. Add butter to a wide pan. Add in the chopped carrots, beans, green chillies, spring onion whites and saute.
5. Add in the chicken stock and cook the veggies for a few seconds. Now add the red chilli powder, garam masala powder, cumin powder and mix it all well.
6. After 2 mins, add maida and mix well.
7. Then add in 3/4 cup of boiled and cooled milk in two parts and keep mixing it all well.
8. Now add the shredded chicken and keep mixing until the mixture is thickened and no moisture is left.
9. Add the chopped spring onion greens and additional salt as per your taste only if required.
10. Mix it all and cook until the mixture is thick and nice. Transfer it into a bowl and cool it down.
11. Apply some oil on the palms and make even sized patties from the chicken mixture. Refrigerate them for about 10 mins to let them set.
12. Crack open the eggs in a bowl. Keep the bread crumbs ready on a plate.
13. Take out the patties from the fridge and then coat them one by one with egg wash first and bread crumbs next.
14. Follow the similar steps for all patties and once the oil in a kadai is heated enough, gently drop in the coated patties and fry them until the outer layer is nicely golden brown in colour.
15. Delicious Russian Chicken Cutlets are ready to be served hot along with some tomato ketchup by the side.
