Braised in a sweet and savory sauce, you can now add the tender slice of meat as topping
to your next bowl of ramen. It’s the most fulfilling reward for any pork belly lovers out there!

Cooking-Time:
Approx. 3 hours

Cooking-Temperature:
Set your Smoker or BBQ on
145°C / 293°F.

For the Smoke

I used the Borniak Smoker with smoking beech chips.
a unique devices bringing the world of smoking and BBQ to a new level.

But you can also smoke them on your favorite BBQ
Add chunks of apple wood
Or any of your favored wood.

Marinate the meat

3 tablespoon of white wine
1 tablespoon of sesame oil
1 tablespoon of mirin
1 tablespoon of dark soy sauce
2 tablespoon of sugar cane
1/2 tablespoon of coarse salt
1 tablespoon of ground black pepper

Put the meat in a vacuum bag and seal it.
Put this in the fridge for at least 12 hours.

When the meat
reaches the core temperature
of 74 C / 165 F is ready.

Rest the meat for 15 minutes
