A necessary trip to the airport in Rome meant that we took a slow journey back home, partly along the coast.
We visited the Hotel Punta Rossa near the lovely town of San Felice Circeo and afterwards rejoined the motorway at Frosinone.

We had lunch at Laurito Beach (opens usually mid May)

Carlos' Caporalessa recipe:
For 2 people (double for 4)
200g bucatini or spaghetti
400g tin of tomatoes
handful of olives
handful of capers
2 cloves of garlic
1 eggplant
diced mozzarella
parmeggiano reggiano /breadcrumbs

Dice the eggplant and soak in salted water for 20 minutes, squeeze water out and fry in vegetable oil until golden. Set aside.
Turn the oven on to 180c
Maker the sauce: squash the garlic, toss into pan with olive oil. Add the tinned tomatoes, chopped olives and capers. Cook for about 20 minutes until the sauce has thickened up (reducing the water form the tomatoes).
Put the pasta onto cook. If it says 10 minutes on the pack cook it for 7. If if says 12 cook it for 9.
Add the eggplant to the sauce.
Add the pasta and the mozzarella and mix it together.
Pour into an oven proof dish. Grate parmesan on top and sprinkle a couple of spoonfuls of breadcrumbs, then pop in the oven for 10-15 minutes.
