Char Kuey Teow is a simple Teochew dish of few ingredients, but that doesn’t mean it’s easy to prepare. A good plate of Char Kuey Teow requires skilled hands at the wok to control the flame in order for the ingredients to come together as one. In Penang, a barefoot hawker insists on preparing Char Kuey Teow the way he is taught - fresh cockles shucked by hand, banana leaves to be flamed before use, and flame controlled by a hand operated fan. Hailing from the village, the cook prefers to practise his trade barefooted.
