阿賢這麽吃 Jason‘s Daily Eats ：叻沙 Laksa

有說“叻沙”源自波斯語Lakhsha，指的是滑溜的米線粉食；也有人相信它源自古印度梵文Laksha，意思是成千上萬，大概是因為它的辛香料組合與作法千變萬化，不計其數。

在東南亞地區，烹煮咖哩叻沙是潮州人的拿手絕活。同樣祖籍潮州惠來的店家夫婦，將各自家鄉檳城與馬六甲的咖哩叻沙特色融為一體，自成一格；再把新鮮蝦子連頭帶殼與麵粉炸成蝦餅，添入叻沙湯，別致混搭成就一碗香濃綿密海洋風叻沙。

馬來半島北部盛行的Laksa Buyong最初是以Buyong“大肚腩”土鍋烹煮，為馬來版本的阿參叻沙。新鮮沙丁魚熬煮酸辣叻沙湯頭，融入咖哩叻沙配料如腐竹、魚餅和雞蛋澎湃登場，叻沙層出不窮的潛力不容小觑。

阿賢以火炬薑花和腰果舂製獨門叻沙青醬Kantan Pesto，再把意大利麵偷龍轉鳳炒成一盤大蝦意麵叻沙，堪稱叻沙的華麗轉身。

In Sanskrit, Laksha means ‘hundred thousand’. With so many styles and spices, it's entirely believable that's how Laksa got its name. In Southeast Asia, there is a collective Teochew Curry Laksa style, but to add fritters made of shrimp and flour for taste and consistency is still unique. The northern Malay Laksa Buyong is given a distinctive Chinese twist when its sardine broth is paired with bean curd skin, fish cake and egg. Want a plate of pasta ala laksa? Fry pasta with the paste of torch ginger bud and cashew nuts, Jason’s Kantan Pesto Fried Laksa is a type of dry laksa.
