A spicy, buttery Mumbai-style Masala Pav made using leftover pavs. Tossed in a fiery onion-tomato capsicum masala with pav bhaji spices, this street-style snack is bold, comforting, and ready in minutes. Perfect for quick dinners, tea-time bites, or late-night cravings!
INGREDIENTS:
For the Masala:
• 3 tbsp butter (for cooking)
• 1 tsp cumin seeds
• 2 medium onions, finely chopped
• 1 capsicum, finely chopped
• 1 tbsp garlic paste
• 1 tbsp red chilli paste (adjust to taste)
• 5 tomatoes, finely chopped
• Salt to taste
• ¼ tsp turmeric powder
• 1 tsp coriander seed powder
• 2 tsp pav bhaji masala
• ¼ cup fresh coriander leaves, chopped
• ½ lemon, juiced
• Water (as needed, to adjust consistency)
For Toasting Pavs:
• Leftover pavs (slit)
• 1 tbsp butter (for toasting)
• Extra masala (for stuffing)
• Grated cheese (optional, for garnish)
• Fresh coriander & chopped onions (to serve)
METHOD:
For the Masala:
• Heat 3 tbsp butter in a pan and splutter 1 tsp cumin seeds.
• Add finely chopped onions and sauté for a minute.
• Add chopped capsicum and cook until the onions and capsicum are soft.
• Stir in garlic paste and sauté for a few seconds.
• Add red chilli paste and chopped tomatoes.
• Mash and cook the tomatoes until they become mushy and well-blended into the mixture.
• Add salt, turmeric, coriander powder, pav bhaji masala, and chopped coriander.
• Mash everything together and let the masala cook down.
• Add a splash of water to adjust consistency.
• Squeeze in half a lemon and give it a final stir.
To Toast & Stuff the Pavs:
• Slice the leftover pavs horizontally, keeping them attached at one edge.
• On a hot tawa, melt 1 tbsp butter.
• Toast the pavs cut-side down until lightly golden.
• Smear a generous amount of hot masala on the inner sides.
• Optionally, stuff with extra masala and top with grated cheese.
• Garnish with fresh coriander.
To Serve:
• Plate the masala pav hot with chopped onions, extra lemon wedges, and a little leftover masala on the side for dipping.
