Full Day of Cooking 1 – Recipes

Breakfast: Spinach Waffles

Dry Ingredients:
1 cup all-purpose flour
1 Tablespoon sugar
2 teaspoons baking powder

Wet Ingredients:
1 cup whole milk
1 egg
1 teaspoon vanilla extract
Handful spinach
¼ cup melted butter, cooled

Directions:
1. Into a large bowl, combine the dry ingredients and set aside.
2. Into a blender container add all the wet ingredients and blend until smooth.
3. Slowly pour the wet ingredients into the dry ingredients and whisk until there are no lumps.
4. Pour ½ cup portion of the batter into your waffle maker and cook per directions.


Lunch: Honey Chipotle Shrimp
Ingredients:
24 oz shrimp, peeled and deveined
1 tsp each: salt, pepper, garlic powder, onion powder, smoked paprika and chili powder
2 Tablespoons olive oil

Sauce:
2 Tablespoons adobo sauce
1-2 chipotle peppers in adobo sauce or to taste
3 garlic cloves, minced
2 Tablespoons honey or to taste
1 Tablespoon ketchup
1 Tablespoon soy sauce

Directions:
1. Toss the shrimp and the seasoning, set aside.
2. Whisk together the sauce ingredients, adjust taste to your liking.
3. In a skillet, heat the olive oil and cook the shrimp for about 3 minutes on each side. Pour in the sauce and toss. Cook until sauce is heated through about 1-2 minutes.

Dinner: Baked Spaghetti

Ingredients:
2 lbs ground beef
1 onion, diced
4 garlic cloves, minced
32 oz marinara sauce
1 cup water or broth, as needed
1 tsp each garlic powder, onion powder, sugar, Italian seasoning and chili flakes
Olive oil, as needed

16 oz spaghetti
8 oz shredded mozzarella
Grated parmesan
Pepperoni, optional

Directions:
1. Brown the ground beef until no longer pink, breaking it up as you go.
2. Transfer ground beef to a plate and sautee the diced onion for 5-7 minutes on low heat. Add oil if necessary. Add the garlic and cook for another minute.
3. Add the marinara sauce and seasoning. Adjust seasoning to your liking and return the ground beef back in. Let simmer while you cook the spaghetti, be sure to cook al dente as it will finish cooking in the oven.
4. Drain the pasta and add the meat sauce and toss with the spaghetti. Leave about 1 cup of the meat sauce and add some to the bottom of a baking dish. Add the spaghetti and meat sauce and top with the remaining meat sauce. Add the mozzarella cheese, grated parmesan cheeseon top then the pepperoni if using. Bake in the oven at 400F until the cheese has melted and pepperoni is crispy about 10-12 minutes.
