Who says Barbacoa can’t be enjoyed from a slow cooker? Vianney shares with us the importance of Barbacoa in her life and how anyone and everyone can make one of the most traditional foods of Tex-Mex cuisine right from their homes!


INGREDIENTS
2 pounds beef cheeks
2 pounds beef chuck roast, cut into 1-inch pieces
4 teaspoons salt
2 teaspoon pepper
1 onion, quartered
3 cloves garlic
2 bay leaves
Tortillas
Salsa
limes


DIRECTIONS:
1) Place the beef into the bottom of the slow cooker. Season with salt, pepper, onion, garlic and bay leaves.
2) Cook on LOW for 6-8 hours until the meat easily shreds. Remove the bay leaves and large pieces of onion.
3) Shred the meat with two forks, return to slow cooker, stir and keep on warm.
4) Serve with warm tortillas, Pico de Gallo, and salsa
