Come along on a day-in-my-life (or more like a week!) in NYC. Cooking, working out, time with Jar & Meryl and picking out our first car together as husbands!!

🍽️ Mediterranean Chicken:

2-3 Medium Size Chicken Breast
1 Cup Rice
1 Small Yellow Onion
3-4 Cloves Garlic
1 Cup Kalamata Olives
3 Tbs Capers
1 Can Artichoke Hearts
1/2 Cup Feta Cheese
1-2 Cups Grape Tomatos
2 Tbs Salt
2 Tbs Pepper
2 Tbs Thyme
2 Tbs Garlic Powder
2 Tbs Oregano
2 Tbs Basil
2 Tbs Olive Oil

Preheat oven to 375.

Start by padding your chicken dry and rubbing 1 tbs of salt & pepper. Let sit for at least 10 minutes, then add a tbs of thyme, garlic powder, oregano and basil to chicken with a little olive oil.

Pan fry chicken for 4 minutes per side on medium heat then set aside.

While frying chicken, start making your rice. I like to substitute chicken stock for water to give it a little extra flavor and protein.

Combine the rest of your ingredients including the olive oil into a large bowl and add a tbs of all of the herbs/spices.

Grease a sheet pan and put the half-cooked chicken breasts on the pan. Pour the ingredients from your big bowl on top and spread it across the sheet pan. Give everything a little extra salt pinch of salt and stick it in the oven.

I use a meat thermometer for my chicken because I’m 1) color blind and 2) all ovens are different. So check your chicken after 10 minutes and then maybe every 5 minutes or so until the internal temp of the largest chicken breast is 160 degrees F.

Serve with rice and enjoy!

🍽️ Lasagna Soup Recipe:

1 Yellow onion
3-4 cloves garlic
1 lb ground beef
1 lb italian sausage (hot or mild)
2-3 tbs olive oil
2-3 tbs salt
1 tbs pepper
1 tbs oregano
1 tbs thyme
1/2 tbs chili flakes
15 oz can tomato sauce
32 oz beef bone broth/stock
1 box pasta of your choice
1/3 cup heavy cream
1/3 cup parmesan
1/3 cup shredded mozzarella
2 tbs ricotta cheese

1. Dice yellow onion and 3-4 garlic cloves.
2. Sauté the onion and garlic with some olive oil until tanslucent. Add salt, pepper, oregano, thyme, and chili flakes.
3. Add 1lb of ground beef and 1lb of italian sausage, cook until browned. Drain majority of the fat.
4. Add 15oz can of tomato sauce and 32 oz of beef bone broth/stock.
5. Cover and bring to a simmer.
6. Add your pasta - I used lasagna noodles which is a MISTAKE. Use smaller noodles that would be easy to eat with a spoon.
7. 2 minutes before the pasta is done, add 1/3 cup of cream, 1/3 cup parmesan, 1/3 cup shredded mozzarella, and 2 tbs ricotta cheese.
8. Mix well, taste, and add more salt/pepper/seasoning if necessary.
