Sharing my memories about Sunday dinner, cream cheese mashed potatoes and Mr. Kelsey's store. This chuck roast comes out moist and very tender and flavorful and it makes its own gravy. The cream cheese mashed potatoes are the perfect side to go with this traditional Sunday dinner. I've listed the ingredients for my Sunday pot roast and my potatoes below. Sunday Roast:
1 - 2 to 3 pound chuck roast
1 can cream of mushroom soup
1 can cream of onion soup
1 envelope beef, onion or mushroom gravy mix
salt and pepper to taste
1 or two onions, peeled, cut and quartered
About 1/2 a bag of baby carrots

Place all ingredients in a crock pot on high for about an hour. Reduce heat to low for 3 to 4 hours or until meat is tender and cooked through.

Cream Cheese Mashed Potatoes
About a pound of red potatoes peeled and cut into chunks
3 tablespoons cream cheese
butter, salt and pepper to taste.

In a medium saucepan, add potatoes and cover with water. Bring to a boil, reduce heat and cover. Cook about 20 minutes or until tender. Add cream cheese, butter, salt and pepper and mash until smooth.
