Certified mezcal is defined and classified by a Norma Oficial Mexicana (NOM) on mezcal. Per the Norm and tradition alike, all mezcal is 100% agave/maguey – no other sugar source may be added during fermentation. The Norm establishes three categories of mezcal, Industrial, Artisanal and Ancestral.

The first category is referred to by some critics as “industrial mezcal,” since it allows for modern production methods imported from the tequila industry. At the extreme, these mezcals can be produced by cooking the agave in autoclaves, extracting the juice with a diffuser, and distilling in a stainless-steel column.

The second category is Artisanal and the vast majority of certified mezcal falls into this category. The use of autoclaves, diffusers, and column stills is prohibited.


Key points about artisanal mezcal: 

Traditional methods: Cooked in earthen pits, hand-crushing with a tahona stone, fermented in open containers, and distilled in copper pots over direct fire. 
Focus on quality and flavor: Emphasizes the unique characteristics of each agave variety and the skill of the "maestro mezcalero". 
Small-batch production: Usually made in smaller quantities by local producers. 

Key points about industrial mezcal:
Modern technology: Uses large-scale equipment like autoclaves for cooking, diffusers for extraction, and stainless steel column stills for distillation.
Efficiency and consistency: Aims for a more standardized product with less variation in flavor. (Ex. Using commercial yeast, control temperature for fermentation etc.)
Potentially less nuanced flavor: Due to the use of modern techniques, some argue that industrial mezcal may have a less complex flavor profile compared to artisanal mezcal. 


The more you explore Mezcal, the more you’ll discover, and there’s almost certainly a mezcal for every type of palate out there.
