These homemade Lemon Blueberry Muffins feature a moist and tender lemon flavored muffin with lots of juicy blueberries. A bowl, a whisk and some basic ingredients are all you need to make these fluffy, flavorful muffins.

Ingredients (Makes 12 muffins)

Sugar 1 cup (200 g)
Lemon Zest 1 tbsp (6 g)
Oil ⅓ cup (75 g)
Large Egg 1 (50 g)
Greek Yogurt ½ cup (120 g)
Lemon Juice ⅓ cup (80 mL)
Salt ½ tsp (3 g)
Baking Powder 2 tsp (8 g)
Baking Soda ½ tsp (3 g)
Flour 2 cups (240 g)
Blueberries 2 cups (250 g)
-for the topping
Coarse sugar ¼ cup (50 g)

Directions

1. Stir together sugar and lemon zest until sugar is moistened and takes on a pale yellow color. Add oil, egg, yogurt and lemon juice to the sugar and whisk to combine.
2. Whisk baking powder, baking soda and salt into batter.
3. Add flour and stir until just combined. The batter doesn’t need to be smooth, some streaks of flour are fine.
4. Gently fold fresh or frozen blueberries into batter. (If using frozen blueberries, don’t thaw first)
5. Set batter aside for at least 30 minutes. The batter will thicken during this time. Meanwhile preheat oven to 425° F (218° C).
6. Scoop the rested batter into a paper lined or greased muffin pan. Fill each cavity to nearly the top.
7. Sprinkle 1 teaspoon of coarse sugar on top of each muffin.
8. Bake in the upper third of a 425° F (218° C) oven for 10 minutes. Then (without opening the oven door) lower the temperature to 350° F (177° C) and bake for an additional 8-10 minutes or until a toothpick inserted in the muffins comes out clean.
9. Cool for 5 minutes in the pan before removing to a wire rack to finish cooling.
