The modes of the major scale give a different flavour for each, and this video is more about the sounds than just theory on its own. The internet is awash with the theory, but it’s only good if one can hear the sounds that can be obtained from just one scale, to go with seven chords:

An overview of the theory:

Key is C major, and therefore the following modes can be used over the chords that are built on the major scale: all modes have the same notes in (here, the key of C major has no sharps and flats so it’s all white notes), and they just start and end in different places

Chord I - C major - Ionian mode (C to C)
Chord ii - D minor - Dorian mode (D to D)
Chord iii - E minor (but also E7, so there’s a G# in the chord) - Phrygian mode (E to E)
Chord IV - F major 7 - Lydian mode (F to F)
Chord V - G7 - Mixolydian mode (G to G)
Chord vi - A minor - Aeolian mode (A to A)
Chord vii - B dim (but also B minor 7 b5) - Phrygian mode (B to B)

The theory is always there to back things up, and to use, but it’s also very much about what it sounds like.
