🛒 Ingredients for Chicken Mandi:

For the Mandi Masala Powder:
• 2-inch Cinnamon stick
• 2 tbsp Coriander seeds
• 1 tbsp Fennel seeds
• 5-6 Cardamom pods
• 7-8 Cloves
• A small piece of Mace
• 1/2 Nutmeg
• A small piece of Dry Ginger
• 1 tbsp Black Peppercorns
• 1 tbsp Cumin seeds

For Chicken Marination:
• 1.2 kg Chicken (4 joint pieces)
• Prepared Mandi Masala powder (use half)
• 1 tbsp Dry Ginger powder
• Salt to taste
• 2 tbsp Red Chilli powder
• 2 tbsp Ginger Garlic paste
• 2 tbsp Curd (Yogurt)
• 1 tbsp Oil
• 1 tbsp Lemon juice

For Garnish & Rice Preparation:
• Almonds, Cashews, and Raisins (as needed)
• Oil (for frying dry fruits)
• 3 cups Rice (soaked for 30 mins)
• 4-5 tbsp Oil (for frying the cooked chicken)

For the Mandi Rice:
• 1 tbsp Ghee
• 2 tbsp Oil
• 2 Star Anise
• 2 Bay leaves
• 1 Large Onion (finely chopped)
• 1 tbsp Ginger Garlic paste
• 1/2 tbsp Green Chilli paste
• Prepared Mandi Masala powder (remaining half)
• Salt to taste
• 6 cups Water (including the 1-liter chicken broth from steaming)
• A pinch of Food Color (mixed with a little water)

For the Smoky Flavour:
• 2 to 3 pieces of Charcoal
• A small piece of Cinnamon stick
• A few drops of Oil
