To Make Ground Masala

Onion - 2 Nos
Rock Salt - 1 Tsp
Coriander Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Garlic - 10 Cloves
Turmeric Powder - 1 Tsp
Chilli Powder - 2 Tsp
Tamarind
Water



To Make Ivy Gourd Rice

Basmati Rice - 1 Cup
Oil - 5 Tbsp
Ivy Gourd / Tindora - 1/2 Kg
Chana Dal - 1 Tsp
Urad Dal - 1 Tsp
Mustard Seeds - 1 Tsp
Cumin Seeds - 1 Tsp
Red Chilli - 2 Nos
Hing - 1/2 Tsp
Curry Leaves
Onion - 1 No.
Salt - 1 Tsp
Ghee - 1 Tbsp
Coriander Leaves

Prep Time: 10 mins
Cook Time: 25 mins
Servings: 4

METHOD:

1. For the masala paste, take chopped onions, garlic cloves, coriander seeds, cumin seeds, rock salt, red chilli powder, turmeric powder and tamarind bits in a mixer jar.
2. Grind the ingredients to a smooth paste by adding very little water. Keep it aside.
3. Take a wide kadai, add oil, heat it and stir fry the ivy gourd slices until they are golden brown in color. Keep them aside.
4. Add some more oil to the same kadai and heat it.
5. Add chana dal, urad dal, mustard seeds, cumin seeds and saute. After the mustard seeds start splattering, add the roughly cut up red chillies, hing and curry leaves.
6. Add chopped onions to the kadai and mix well.
7. Once the onions are golden brown in color, add the onion paste and mix well.
8. After the masala is cooked and becomes dry, add the fried tindora pieces and mix with the masala. Add a little water if required.
9. Add salt, mix well and cook the ivy gourd pieces for 5 mins.
10. Then add the cooked basmati rice, mix and make sure it is coated well with the masala.
11. Add ghee and chopped coriander leaves. Mix.
12. Yummy Ivy Gourd Rice is ready to be served hot and nice.

Dondakaya/Ivy gourd/Tindora tastes wonderful when it is fried. But in this video, you can see the preparation of a nice rice recipe with fried ivy gourd and ullipaya karam which is made with onions. This rice is rich in flavor with the right amount of spice level, tanginess and salt. We first have to shallow fry the dondakaya/ivy gourd/coccinea. We then make a nice onion masala. In the end, we combine all the fried dondakaya, ullikaram and mix with rice. This dondakaya ullikaram rice is absolutely rich in flavor and you don't need any side dish with this one except the fryums and papads.
