Stuffed potatoes are a delicious dish where potatoes are baked or boiled and then filled with various ingredients. Here's a simple recipe for stuffed potatoes:

Servings - 6
Prep time - 20 minutes
Cook time - 30 to 40 minutes

INGREDIENTS:-

Dough:
6 to 8 medium-sized potatoes
3/4 cup white rice flour
1/3 cup cornstarch or tapioca flour (1/3 cup)
salt to taste
1/6 tsp black pepper powder

Filling:-

1.5 tbsp vegetable oil
1/2 tsp cumin
2 green chili chopped
6 to 8 cloves of garlic minced or chopped
250 gm mushrooms chopped
1 medium-sized onion chopped
1/4 cup chopped beans
1 small chopped carrot
1 green capsicum chopped
Salt to taste
Salt & pepper to taste
1/4 tsp oregano
1/4 tsp basil
1/4 tsp thyme
1/4 tsp chili flakes (optional)

Additional ingredients:
oil for frying
Cheese to taste (optional)

Instructions:-

1. Wash the potatoes thoroughly and boil.
2. Mash the potato with a masher and let it cool down.
3. Once cool down the potato, add black pepper powder, salt to taste, cornstarch, and rice flour combine well and keep aside.
4. Heat a pan and add vegetable oil.
5. Add cumin seeds and chopped green chili.
6. Saute for 10 seconds on medium heat.
7. Add chopped or minced garlic and saute until the raw taste goes away.
8. Add chopped mushroom and saute until the water dries up on med to high flame.
9. Add chopped onion and cook for 6 to 8 minutes on medium flame.
10. Add chopped French beans, carrots, and salt to taste.
11. Saute the vegetables until cooked well.
12. Add chopped capsicum and saute for 3 to 4 minutes.
13. Add oregano, basil, and thyme and saute for 1 minute on high flame.
14. Apply some oil on the palm and take a ball-sized dough.
15. Add cheese (optional), and place stuffing in the center.
16. Start pleating the edge bring it together and join.
17. heat vegetable oil in a pan on medium flame.
18. Place the stuffed potato, after 5 minutes flip them carefully.
19. Fry them on low-med flame until the bottoms are golden brown and crispy.
20. They will become crunchy on the outside and soft on the inside.
21. Once done, remove and place in a stainer.

Garnish with additional chopped green onions or sour cream if desired.
This stovetop method provides a quicker alternative to baking in the oven while still achieving crispy, delicious stuffed potatoes. Enjoy your meal!
