1. SET UP. Unfold the Legs until they click into place. Set the mandoline on a solid surface, facing directly away from you.

2. ADJUST. Push and turn the Adjustment Knob to the desired setting. In this model, you can choose to slice at a thickness of 1mm to 9mm, or to cut julienne strips of 4.5mm or 9mm.

3. HOLD. Cut the vegetable you are slicing in half. Lift the top of the Food Holder to expose the prongs on the underside, and slide the end of the vegetable onto the prongs to secure it. Be sure to hold this with the finger grooves facing the top and bottom of the slicer – this will align the holder so that the guides go down the runway properly.

4. SLIDE. Use the Food Holder to firmly slide the vegetable from the top to the bottom of the Runway. Continue a back-and-forth motion keeping the Food Holder in contact with the Runway until vegetable is completely sliced. If the food can’t go in a holder, be sure to use Safety Gloves to hold the food instead.
