Blueberry muffins:
Crumble:
-1/4 Cup plus 1 tablespoon sugar
-2 tablespoons all-purpose flour
-2 tablespoons cold unsalted butter

Muffins
-cooking spray
-1 1/3 cups all-purpose flour
-1 teaspoon baking powder
-1/2 teaspoon salt
-8 tablespoons ( 1 stick) unsalted butter, softened
-1 cup sugar
-2 large eggs
-1 teaspoon vanilla extract
-1/2 cup sour cream
-1 cup frozen blueberries, unthawed

Directions
- To make crumble: in a medium bowl, stir together the sugar and flour. Use pastry blender or fingers to cut in the butter, mixing it thoroughly until it resembles coarse crumbles. Refrigerate until ready to use.
- To make muffins: preheat oven to 350 degrees. Spray 12 cups of a muffin tin with cooking spray.
-In a medium bowl, stir together the flour, baking powder, and salt.
- In a stand mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy. Reduce the speed to low and slowly add the eggs and vanilla. Turn the mixer to medium -high speed and mix until well incorporated.
- With the mixer on low speed, add half of the flour mixture, then half of the sour cream. Add the remaining flour and sour cream and mix well. Fold in blueberries.
- Using a 1/4 cup measure, fill the prepared muffin cups three-quarters full. Sprinkle crumble on top of each muffin.
-Bake for 24-28 minutes. ENJOY!

Market soup recipe
* Use vegetables of choice! If using animal protein make sure to cook before adding to soup*
Ingredients
-1 large onion, diced
-1 green pepper, diced
-3 carrots, diced
- 2 tomatoes, diced in large chunks
-4 cloves garlic, minced
-1 cup dry green or brown lentils, rinsed and picked over or protein of choice
-4 cups vegetables broth + 1 cup water
-1 ½ tsp kosher salt, to taste
-½ tsp cumin
-½ tsp coriander
-3 medium yellow potatoes, diced
-3 cups frozen kale
-1-2 tbsp lemon juice to taste
-Freshly ground black pepper

- Turn instant pot on saute and add 1 tablespoon of olive oil. Saute all the veggies until slightly softened.
-Place all ingredients except lemon juice in the Instant Pot.
-Make sure the steam release valve is set to "sealing." Press manual or high pressure button and cook for 12 minutes. Once it’s done, carefully quick release any remaining steam using the valve on top. Remove the lid and turn the machine off.
Season with lemon juice to brighten it up and taste, adjusting salt and pepper if needed.
ENJOY!

Steak
- Season filet mignon on both sides with salt and pepper.
- Heat a cast iron pan on high heat with olive oil and pan fry steak for 2-3 minutes on each side.
- Add butter, garlic, and fresh rosemary to cast iron and bake steak in oven at 375 degrees for 2-12 minutes depending on how you like your steak. I did mine for 7 minutes and it was a perfect medium!

Mash potatoes:
-Wash and peel yellow potatoes. Chop in large chunks.
-Add to a pot with boiling water and cook until softened.
- Drain potatoes but reserve about 1/2 cup of the potato water for mashing.
- Mash the potatoes and season with salt, pepper, butter, sour cream and parsley.

Broccoli
- Steam broccoli in steam basket with boiling water for about 3 minutes!
- Season with butter, salt, and pepper.
