Ingredients:
Chicken (bone-in or boneless) – 500 grams (cut into pieces)
Oil – 3 tablespoons (for frying)
Ginger-garlic paste – 1 tablespoon
Turmeric powder – 1/2 teaspoon
Red chili powder – 1 tablespoon (adjust to spice level)
Coriander powder – 1 tablespoon
Cumin powder – 1/2 teaspoon
Garam masala powder – 1 teaspoon
Lemon juice – 1 tablespoon
Salt – to taste
Fresh coriander leaves – for garnishing
Fried onions (optional, for garnish)
Green chilies – 2 (slit)
For Marinade:
Yogurt – 2 tablespoons
Ginger-garlic paste – 1 tablespoon
Red chili powder – 1 teaspoon
Turmeric powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Cumin powder – 1/2 teaspoon
Salt – to taste
Instructions:
Step 1: Marinate the Chicken
Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, and salt.
Mix well, ensuring all the pieces are coated with the marinade.
Cover and refrigerate for at least 30 minutes (you can marinate for longer if possible to enhance the flavors).
Step 2: Fry the Chicken
Heat oil in a deep pan or wok on medium heat.
Once the oil is hot, add the marinated chicken pieces and fry them in batches. Ensure not to overcrowd the pan.
Fry the chicken pieces for 6-8 minutes on each side, or until they are golden brown and cooked through. The chicken should be crispy on the outside.
Remove the fried chicken and place them on paper towels to absorb excess oil.
Step 3: Prepare the Fry Coating
In the same pan, add a little more oil if needed.
Add ginger-garlic paste and sauté for 1-2 minutes until fragrant.
Add red chili powder, coriander powder, cumin powder, and garam masala. Stir-fry for another 2 minutes, adding a bit of water if it gets too dry.
Add the slit green chilies and mix well.
Step 4: Coat the Fried Chicken
Add the fried chicken pieces to the pan with the spice mixture.
Toss the chicken in the spice mixture until evenly coated. Adjust salt and add a squeeze of lemon juice.
Let it cook for 2-3 more minutes, allowing the chicken to absorb the spices and flavors.
Step 5: Garnish and Serve
Garnish with fresh coriander leaves and fried onions (if using).
Serve hot with naan, roti, or rice, and enjoy your homemade chicken fry!
