Ingredients (Orange Muffins):
▢ 70 g granulated sugar (about 1/3 cup)
▢ 1/2 tablespoon orange zest
▢ 1 large egg, at room temperature
▢ 1/2 tsp vanilla extract
▢ 60 ml vegetable oil (about 1/4 cup)
▢ 30 ml orange juice (about 2 tablespoons)
▢ 60 g plain yogurt (about 1/4 cup)
▢ 135 g all-purpose flour (about 1 cup + 1 tbsp)
▢ 1 tsp baking powder
▢ 1/4 tsp salt

Baking Time:
20–25 minutes at 350°F (180°C) in a preheated oven

Prepare the Batter:

In a mixing bowl, combine 70 g of sugar with 1/2 tablespoon of orange zest. Rub them together until fragrant — this helps release the orange oils for extra flavor.

Add 1 large egg, 1/2 tsp of vanilla extract, 60 ml of vegetable oil, 30 ml of orange juice, and 60 g of plain yogurt. Whisk until smooth and well combined.

Sift together 135 g of all-purpose flour, 1 tsp of baking powder, and 1/4 tsp of salt.

Gradually add the dry ingredients to the wet mixture. Mix gently until a smooth batter forms — don’t overmix.

Bake the Muffins:

Preheat your oven to 350°F (180°C).
Line a muffin tray with paper liners or lightly grease the cups.
Divide the batter evenly among the muffin cups, filling them about 3/4 full.
Bake in the preheated oven for 20–25 minutes, or until the tops are
golden and a toothpick inserted into the center comes out clean.

Let the muffins cool slightly before serving.
