Tennessee Onion Pizza & Fall Cheesecake Parfaits | Southern Cooking

Tennessee Onion Pizza
Ingredients:
1 store bought pizza dough
5 Tbsp. melted butter, divided
1 tsp garlic powder
1 tsp. dried thyme
3/4 tsp. dried oregano
1/2 tsp. dry mustard
1/2 tsp chipotle seasoning
8 oz shredded cheese of your choice, mozzarella, sharp white, or smoked cheddar is great!
1 or 2 onions, sliced into 1/4-in.-thick slices and separated into rings

Directions:
Preheat oven to 375.
Bake dough on a greased cookie sheet, or pizza pan, for ten minutes.

In a small bowl, stir together 3 tablespoons melted butter and garlic powder. Brush evenly over pizza dough, leaving a 1/2 inch border on all sides.

Sprinkle pizza dough evenly with 1/2 cup each of the cheeses, leaving the 1/2 inch border on all sides.

In a large bowl, toss onions with remaining 2 tablespoons butter, dry mustard, oregano, thyme, and chipotle seasoning until evenly coated. Spread onions in an even layer on top of the pizza, then top with remaining cheeses.

Bake 13-15 minutes or until edges are puffed and golden brown and cheese is melted and browning.

Fall Cheesecake Parfaits
Ingredients:
Gingersnap cookies, crushed
8 oz homemade whipped cream or thawed whipped topping
1 block softened cream cheese
1/4 cup sugar
1/2 tsp vanilla
Optional Flavors:
Add 1/2 tsp pumpkin pie spice for pumpkin spice cheesecake parfaits.
Add 1/2 tsp apple pie spice for apple cheesecake parfaits.
Add 1/4 cup creamy peanut butter for PB cheesecake parfaits.
Toppings:
Whipped cream, candy corn, or fall sprinkles

Directions:
Divide crushed cookies between 8oz dessert cups. This recipe should make around 7-8 parfaits.
Mix whipped topping, cream cheese, and sugar until smooth. Add vanilla.
Add the spice of your choice or peanut butter and mix it in.
Layer the cheesecake mixture on top of cookies.
Refrigerate until ready to serve.
Top with whipped cream and toppings.
