INGREDIENTS:
Cabbage julienne cut (गोभी जुलिएन कट) - 2 cup
Salt (नमक) - ½ tsp
Onion julienne cut (प्याज़ जुलिएन कटा हुआ) - 1 cup
Ginger Chopped(अदरक बारीक कटा हुआ) – ½ tbsp
Garlic Chopped (लहसुन बारीक कटा हुआ) - ½ tbsp
Green Chilli Chopped (हरी मिर्च कटी हुई) - As per required
Cumin Seeds (जीरा) - 1 tsp
Turmeric Powder (हल्दी पाउडर) ¼ tsp
Coriander Seeds crushed (धनिये के बीज) - 1 tbsp
Dried Fenugreek Leaves / Kasuri Methi (कसूरी मेथी) - 1 tsp
Black Pepper Powder (काली मिर्च पाउडर) - 1 tsp
Carom Seeds / Ajwain (अजवाइन) - 1 tsp
Chat Masala (चाट मसाला) - 1 tbsp
Kashmiri Mirch Powder (कश्मीरी मिर्च पाउडर) - ½ tbsp
Coriander Chopped (धनिया कटा हुआ) - ½ cup
Rice Flour (चावल का आटा) - 1 cup
Salt (नमक स्वादानुसार) - As per Taste
Gram Flour / besan (बेसन) - 2 cup or As per required
Water (पानी आवश्यकता अनुसार) - As per required

Oil (तेल) - As per required
Coriander Chopped (धनिया कटा हुआ) - For garnishing




Preparation:
Today we are making cabbage kabab!
Take 2 cup Cabbage julienne cut in a bowl, add ½ tsp salt
Mix well to apply salt, this will helps in softening cabbage
Remove excess water and transfer it in another bowl
Add 1 cup Onion julienne cut, add ½ tbsp Chopped Ginger, add ½ tbsp Chopped Garlic
Add Chopped Green Chilli as per required
Add 1 tsp Cumin Seeds, add ¼ tsp Turmeric Powder
Add 1 tbsp Crushed Coriander Seeds, add 1 tsp Dried Fenugreek Leaves / Kasuri Methi
Add 1 tsp Black Pepper Powder, add 1 tsp Carom Seeds / Ajwain
Add 1 tbsp Chat Masala, add ½ tbsp Kashmiri Mirch Powder
Add ½ cup Coriander Chopped, add 1 cup Rice Flour
Add Salt as per taste
Mix well
Add Gram Flour / besan in batches
Mix well
As per requirement add remaining Gram Flour / besan
Add water as per required to adjust its consistency
Mix well to achieve thick consistency
Don’t add excess water as salt will naturally release water
Now apply some oil on both hands
Make a round palm size medium cutlets
Transfer it to another plate
Now at this stage you can deep fry but we will shallow fry
Heat the Oil as per required for shallow fry on high heat
Add cabbage cutlets carefully and shallow fry on low to medium heat
Shallow fry each side for 2-3 minutes or until crispy and golden brown
Flip and repeat on other side
Now it’s perfectly crispy and golden brown
Once done transfer it on oil drip tray or tissue carefully
Our Crispy cabbage kabab are ready to serve!
Garnish with some fresh chopped coriander
Serve with ketchup and Green Chutney
