Shopping List:
Catfish Po Boy:
2-4 catfish filets
1 cup flour
1 cup yellow cornmeal
cajun seasoning (to taste)
1 tomato
shredded romaine lettuce
french bread
2 liters oil for frying
lemon
louisiana hot sauce
3 eggs
1/4 cup whole milk

Remoulade Sauce:
1/4 - 1/2 cup mayo
1 tbsp dijon mustard
2 tsp lemon juice
worcestershire sauce
cajun seasoning
smoked paprika
2 tbsps sweet relish
hot sauce

Directions:
Make your remoulade sauce first and place in the fridge to stay cool. Next, season your fish on both sides. In 1 mixing bowl, whisk 3 eggs and milk. Add hot sauce and set aside. Next, in another mixing bowl, combine flour and cornmeal. Season to taste. Place the fish into the eggwash and then into the flour mixture and then onto a plate. Heat oil to 350 degrees and fry for 4-5 minutes or until golden brown and 145-150 internal temp minimum.

Toast French bread if desired for a few minutes. Slice tomatoes and shred romaine lettuce. Add remoulade to both sides of the bread and add 2 fish filets along with tomato and lettuce.
