Instead of meal prepping, I love to ingredient prep a few things that I can throw into different meals throughout the week to make eating at home more quick and easy!

JASMINE RICE
1 1/2 cup jasmine rice, rinsed well
1 1/2 cup water
1 teaspoon salt, to taste

ROASTED CHICKPEAS
15 oz can chickpeas, drained
1 tablespoon avocado oil
1/2 teaspoon garlic powder
1/2 tablespoon hot honey
1/2 teaspoon red pepper flakes
sprinkle of salt and black pepper

STRAWBERRY CHIA JAM
16 ounces frozen strawberries
3 tablespoons honey, add to taste
3 tablespoons chia seeds
squeeze of lemon juice

OVEN ROASTED POTATOES:
2 to 3 russet tomatoes, peeled and diced
2 tablespoons avocado oil
1/2 to 1 teaspoon salt, to taste
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons cornstarch
