🟢做法:
1️⃣ 將腐竹浸柔軟後瀝乾水分備用。
2️⃣ 蔥切粒,分開蔥白和蔥綠,蔥綠留作裝飾。薑、蒜切碎,豆豉略為切碎,把蔥白、薑、蒜和豆豉放入碗中,灒入熱油,加入蠔油 1 湯匙、 糖 1 茶匙、 生抽 2 茶匙、 老抽 1 茶匙、 鹽 1/4 茶匙、胡椒粉少許拌勻備用。
3️⃣ 排骨洗淨,吸乾水分,加入備好的醃料、 1 湯匙澱粉,抓勻醃製30 分鐘。
4️⃣ 腐竹加少許鹽和油拌勻排入碟中,鋪上醃好的排骨,避免重疊,水滾下鍋,大火蒸 10 分鐘,撒上蔥花即可享用!

🟢 Cooking Directions:
1️⃣ Soak the dried beancurd sticks in water until softened. Drain well and set aside.
2️⃣ Chop the spring onion and separate the white and green parts. Reserve the green part for garnish. Mince the ginger and garlic. Roughly chop the fermented black beans. Place the white part of the onion, ginger, garlic, and black beans in a bowl, pour in hot oil, then mix in 1 tbsp oyster sauce, 1 tsp sugar, 2 tsp light soy sauce, 1 tsp dark soy sauce, 1/4 tsp salt, and a pinch of white pepper. Mix well and set aside.
3️⃣ Wash the pork ribs and pat them dry. Add the prepared marinade and 1 tbsp cornstarch. Mix well and marinate for 30 minutes.
4️⃣ Season the softened beancurd sticks with a pinch of salt and a bit of oil. Arrange them on a plate, then spread the marinated ribs on top in a single layer (avoid overlapping). Bring the water in your steamer to a boil first. Once boiling, place the dish into the steamer and steam over high heat for 10 minutes. Garnish with chopped green onion and serve hot!

Kecap Asin – 2 sdt
Kecap Hitam – 1 sdt
Gula – 1 sdt
Garam – 1/4 sdt
Merica Putih – sejumput
Minyak – secukupnya
Tepung Terigu – secukupnya
🟢 Cara Memasak:
1️⃣ Rendam tahu kering dalam air hingga lunak. Tiriskan dan sisihkan.
2️⃣ Cincang daun bawang dan pisahkan bagian putih dan hijaunya. Simpan bagian hijau untuk hiasan. Haluskan jahe dan bawang putih. Potong kasar tauco hitam. Masukkan bagian putih daun bawang, jahe, bawang putih, dan tauco ke dalam mangkuk, tuangkan minyak panas, lalu tambahkan 1 sdm saus tiram, 1 sdt gula, 2 sdt kecap asin, 1 sdt kecap hitam, 1/4 sdt garam, dan sejumput merica putih. Aduk rata dan sisihkan.
3️⃣ Cuci iga babi dan keringkan. Tambahkan bumbu yang sudah disiapkan dan 1 sdm tepung maizena. Aduk rata dan diamkan selama 30 menit.
4️⃣ Bumbui tahu kering yang telah lunak dengan sedikit garam dan minyak. Susun di atas piring, lalu letakkan iga yang sudah dimarinasi di atasnya dalam satu lapisan (jangan ditumpuk). Didihkan air dalam kukusan terlebih dahulu. Setelah air mendidih, masukkan piring ke dalam kukusan dan kukus dengan api besar selama 10 menit. Taburi dengan daun bawang cincang dan sajikan selagi hangat!

🟢 Paraan ng Pagluluto:
1️⃣ Ibabad ang tuyo na tokwa sa tubig hanggang lumambot. Salain at itabi.
2️⃣ Hiwain ang dahon ng sibuyas at paghiwalayin ang puti at berdeng bahagi. Itabi ang berdeng bahagi para sa garnishing. Dikdikin ang luya at bawang. Durugin ng bahagya ang fermented black beans. Ilagay ang puting bahagi ng sibuyas, luya, bawang, at black beans sa isang mangkok, buhusan ng mainit na mantika, pagkatapos ay ihalo ang 1 tbsp oyster sauce, 1 tsp asukal, 2 tsp toyo, 1 tsp dark soy sauce, 1/4 tsp asin, at isang kurot ng puting paminta. Haluin nang mabuti at itabi.
3️⃣ Hugasan ang tadyang ng baboy at patuyuin. Idagdag ang inihandang marinade at 1 tbsp cornstarch. Haluin at i-marinate ng 30 minuto.
4️⃣ Timplahan ang lumambot na tokwa ng kaunting asin at mantika. Ihilera sa plato, ilagay ang baboy sa ibabaw sa isang patag na layer (iwasan ang pagtatambak). Pakuluan muna ang tubig sa steamer. Kapag kumulo na, ilagay ang plato sa steamer at i-steam gamit ang malakas na apoy sa loob ng 10 minuto. Lagyan ng hiniwang berdeng sibuyas at ihain habang mainit!
