A NEW WAY TO BAKE : MAPLE CAKE 
 
Despite the simple exterior, a slice reveals an impressive multilayered cake – my nod to the infamous Medovik, an eight-layer honey cake popular in the countries of the former Soviet Union. This maple cake is on the more involved side of baking and will need two or three large baking sheets or trays (pans) to bake  all the biscuits (cookies) – luckily they bake fairly quickly and you can alternate the trays. I was initially surprised that honey wasn’t vegan. It turns out saving the bees isn’t just about saving honey bees but the many thousands of other native bees that may not produce honey but play a critical role in pollinating so many crops and flowers. Saving the bees is about saving biodiversity. I was even more surprised that you could make an amazing layered honey cake plant-based and without honey. Who knew that the signature flavour that many have come to know and love is actually derived from the aroma of the bicarbonate of soda (baking soda) in the biscuit as it bakes and not the honey itself. Make this cake a day ahead, as something almost alchemical happens overnight as the moisture migrates from the fresh whipped cream filling to the biscuit and it melds together to make a unique confection that is both light and indulgent at the same time.
