Bellam Pakam Garelu Recipe By Amma Chethi Vanta:
Ingredients:
Minapa Pappu (Urad Dal) - 1/4 Kg
Salt - 1 tea spoon
Cooking Soda - A pinch
Bellam (Jaggery) - 1/2 Kg
Elaichi Powder (Cardamom) - A pinch
Water - 2-3 Cups
Cooking Oil - For Frying

Procedure:
Wash & Soak the Urad Dal without skin for 2-3 hours before grinding it into smooth paste of thick consistency. Keep the batter overnight in the fridge for fluffy and crispy garelu. Take out the batter from fridge, add salt and mix before frying. Keep a large bowl on stove, add Bellam and equal amount of water and boil till it becomes string paakam. Filter the impurities from the pakam if any. Turn off the stove and add Elaichi powder. Add a pinch of cooking soda into the batter and mix before frying. Heat the oil in a wide pan. Take a banana leaf or a thick plastic cover or you can even use a tea strainer. Keep batter on the leaf, spread a little, make a hole in the middle with finger. Slowly drop the batter on the leaf into the oil and fry till golden. Once fried take out the garelu and drop them in the bellam Pakam. Let them sit in the paakam for a while and absorb the paakam. Pakam garelu or bellam pakam garelu are ready to serve.
