It is the traditional Roti we make in a Sri Lankan house but with a little twist to it. Also I am making a tomato curry to dip and eat the pol roti with. It is a very easy curry when you have nothing else to make..

Ingredients:
For Vegetable Roti
3 Cups of All purpose flour
1 1/2 cups of shredded coconut- I am using desiccated coconut
Water as needed (used about one cup)
salt to taste
Scallions chopped (cut in to small pieces)
Carrots chopped
Green chili chopped (if preferred)
Onions chopped
One clove of garlic chopped

For Tomato Curry:
3 Tomatoes sliced
One Onion sliced
Pandan leaves
Cinnamon
Curry leaves (Not available for me)
2 Cups of coconut milk
2 tbsp of Oil (I am using olive oil)
1 tsp of curry powder (unroasted)
1/2 tsp of chili powder
1/4 tsp of turmeric powder
Salt to taste
Pepper

Pan to make the roti
Spray oil or little oil on a side to wipe the pan

**When making roti in Sri Lanka in some house holds they tend to leave the knead roti dough to rest for couple hours. In this recipe, I was making roti for dinner, so I make the dough in the morning and let it rest till the dinner time. But some make the dough right before making roti without leaving to rest. Both methods are acceptable, in the sense leaving the dough for few hours or overnight helps the yeast reactions which will help the digesting system..
