Capsicum Rice Recipe

#### Ingredients:
1 cup basmati rice or normal rice
1 large capsicum (bell pepper), diced (use different colors for a vibrant look)
1 medium onion, finely chopped
2 tomatoes, chopped
2 green chilies, slit
1 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
1/2 tsp cumin seeds
1/2 tsp mustard seeds
A few curry leaves
2 tbsp oil or ghee
Salt to taste
Fresh coriander leaves for garnish

#### Instructions:

1. **Cook the Rice**:
Wash the basmati rice thoroughly and soak it in water for 20 minutes.
Cook the rice with 2 cups of water until it's done but not mushy. Spread it on a plate to cool and keep it aside.

2. **Prepare the Capsicum Mixture**:
Heat oil or ghee in a pan on medium heat.
Add mustard seeds and let them splutter. Then add cumin seeds and curry leaves.
Add the finely chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell disappears.
Add chopped tomatoes and cook until they become soft and the oil starts to separate.
Add turmeric powder, red chili powder, and salt. Mix well.
Add the diced capsicum and cook for 5-7 minutes until they are tender but still crunchy.

3. **Combine Rice and Capsicum Mixture**:
Add the cooked rice to the capsicum mixture.
Sprinkle garam masala over the rice and gently mix everything together, ensuring the rice is well coated with the spices.
Cook for an additional 2-3 minutes to let the flavors blend.

4. **Garnish and Serve**:
Garnish with freshly chopped coriander leaves.
Serve hot with raita, pickle, or any side dish of your choice.

Enjoy your flavorful and colorful Capsicum Rice!

#### Tips:
You can add other vegetables like peas, carrots, or corn to make it more nutritious.
Adjust the spice levels according to your preference.
Leftover rice can also be used for this recipe.
