Resep Kambing Bakar Kecap (untuk 6 porsi)
Bahan:
1 kg daging paha kambing , potong
1 buah jeruk nipis
jahe
Bahan bumbu halus:
5 siung bawang merah
3 siung bawang putih
3 butir kemiri
1 sdt lada butir (hitam dan putih)
3 cm kunyit
3 cm jahe
3 cm lengkuas
1/3 butir pala
1 sdt jintan
1 sdt ketumbar
50 ml minyak
25 ml air
Bahan lainnya:
2 lembar daun salam
6 lembar daun jeruk
½ sdm asam jawa
700 ml air
2 sdt gula pasir
½ sdm garam
2 ½ sdt kaldu bubuk
Bahan bumbu bakar (untuk 1/3 daging):
7 siung bawang merah
5 buah cabai rawit merah
1 buah tomat merah
1-2 sdm margarin
1 sdm kecap manis
1 sdm saus tiram
Bahan pelengkap lainnya:
acar
emping
bawang merah goreng
nasi putih
sambal rawit
Cara membuat:
1. Marinasi kambing dengan perasan jeruk nipis, aduk rata kemudian rebus daging kambing dengan jahe selama 5-10 menit, bilas hingga bersih
2. Di dalam blender masukkan semua bahan bumbu halus, haluskan kemudian tumis bumbu halus hingga wangi dan mengeluarkan minyak
3. Masukkan daun jeruk dan daun salam, tumis sesaat kemudian masukkan daging kambing, tumis sesaat
4. Masukkan air, asam jawa, garam, gula pasir, kaldu bubuk, masak selama 30-45 menit
5. Potong tomat, iris bawang merah dan cabai rawit merah
6. Panaskan margarin kemudian tumis bawang merah dan cabai rawit merah hingga wangi
7. Masukkan daging dan sedikit kuah rebusan, masak sesaat kemudian tambahkan kecap manis, saus tiram, tomat dan sedikit kuah rebusan kambing, masak sesaat
8. Kambing bakar kecap siap disajikan

Soy-Glazed Goat Recipe (yield 6 servings)
Ingredients:
1 kg goat thigh meat, sliced
1 pc lime
Ginger
Spices:
5 pc shallot
3 clove garlic
3 pc candlenut
1 tsp whole pepper (black and white)
3 cm turmeric
3 cm ginger
3 cm galangal
1/3 pc nutmeg
1 tsp cumin
1 tsp coriander
50 ml oil
25 ml water
Other ingredients:
2 pc bay leaf
6 pc kaffir lime leaf
½ tbsp tamarind
700 ml water
2 tsp sugar
½ tbsp salt
2½ tsp stock powder
Soy Glaze ingredients (for 1/3 of the meat):
7 pc shallot
5 pc red Thai chili
1 pc red tomato
1-2 tbsp margarine
1 tbsp sweet soy sauce
1 tbsp oyster sauce
Add-ons:
Pickle
Emping
Fried shallot
White rice
Thai chili sambal
Steps:
1. Marinate the goat with lime juice. Mix well, then boil the goat meat with ginger for 5-10 minutes. Rinse clean.
2. In a blender, add all the spices. Blend, then sauté until fragrant and oily.
3. Add kaffir lime leaves and bay leaf. Sauté briefly, then add goat meat. Stir-fry briefly.
4. Add water, tamarind, salt, sugar, and stock powder. Cook for 30-45 minutes.
5. Slice the tomato, shallots, and red Thai chili.
6. Heat the margarine, then stir-fry the shallots and red Thai chili until fragrant.
7. Add meat and a bit of the broth. Cook briefly, then add sweet soy sauce, oyster sauce, tomato, and a bit more broth. Cook briefly.
8. Soy-Glazed Goat is ready to serve.
