Pineapple jalebi

Hello and welcome to spices and more. Wishing you all a very very happy Diwali or Deepavali ! Try this delicious fusion recipe this Diwali ! You are surely going to impress your guests with this indulgent and delicious treat !
Jalebi is a very traditional sweet to take it to the next level, add the ever so versatile pineapple to it and boom you have a delicious treat ! Let us get straight to it, shall we.

you will need ...

pineapple 1 - skin and core removed and sliced to thin slices
oil for deep frying
pistachios and almonds 1 tbsp roughly chopped

batter :
pain flour or maida 1 cup
baking powder 1/2 tsp
salt 1/2 tsp
corn flour 2 tbsp
ghee 2 tsp
water approx 1 cup

for syrup :
sugar 2 cups
water 1 1/2 cup
lemon juice 1 tsp
cardamom powder 1/2 tsp
orange food colouring a few drops (optional)

1. First let us carefully remove the pineapple skin and slice it thin
2. We will next get the syrup ready
3. Take the sugar in sauce pan and add water
4. Let this boil for about 5-7 mins
5. Add the lemon juice and cardamom powder
6. Keep boiling until the the syrup reaches one string consistency
7. Add the food colouring at this point and stir well
8. Our syrup is ready now. We will keep this warm until we fry the jalebi
9. Let us get the batter now
10. Take the plain flour, corn flour, baking powder, salt and ghee
11. Start by combining these ingredients
12. Start adding water slowly while mixing
13. Make sure you are mixing rigorously so that gluten forms
14. Our batter is ready now
15. In a shallow pan let us take oil for deep frying
16. Let’s keep it on medium heat
17. Dip the sliced pineapple in the batter, ensuring it is fully coated with the batter
18. Gently place this in the oil
19. Deep fry for about 3-4 mins, you will see the jalebis floating and a very light golden colour
20. We will keep the syrup warm and right next to the frying pan
21. Once the jalebi is done gently squeeze the oil out and immediately dunk it in the syrup and make sure it is full submerged in the syrup
22. Leave it in the syrup for 2-3 mins and gently squeeze out excess syrup and place it on a plate
23. Repeat the process for the rest of the pineapple slices
24. It does not need any garnish but if you want you can garnish with roughly chopped pistachios and almonds
25. Like me If you have any batter left over, you can pour into a piping bag and make plain jalebis
26. This is best served hot, but stays crispy for a few hours
