Red chilli powder – 1 tbsp
Desiccated coconut – 2 tbsp
Jaggery powder – 1 tbsp

Tamarind Chutney:
Tamarind – ¼ cup (soaked and extracted)
Jaggery powder – 1 cup
Red chilli powder – 1 tsp
Fennel seeds (Saunf) – ½ tsp
Cumin seeds (Jeera) – ½ tsp
Carom seeds (Ajwain) – ½ tsp
Dry ginger powder – 1 tsp
Salt – ½ tsp
Green Chutney:
Mint leaves – 1 cup
Coriander leaves – 1 cup
Green chillies – 5
Ginger – 2-inch piece
Raw mango – ½ cup
Salt – ½ tsp
Spiced Peanuts:
Oil – 1 tbsp
Roasted peanuts – 5 tbsp
Dabeli masala – 1 tsp
Lemon juice – ½
For Assembly:
Onion – 3 (finely chopped)
Omapodi/Plain sev – As needed
Coriander leaves – For garnish
Pomegranate – For garnish
Pav buns – As needed
Butter – For toasting
Optional:
Biscuit – For making dabeli bites
Dabeli: Step-by-Step Instructions:
1️⃣ Make Dabeli Masala: Dry roast coriander, sesame, fennel, cumin, black pepper, cinnamon, cardamom, cloves, star anise, and bay leaf until aromatic. Add turmeric, amchur, black salt, red chilli powder, desiccated coconut, and jaggery powder. Cool and grind into a coarse powder.
2️⃣ Prepare Tamarind Chutney: Boil tamarind extract with jaggery, red chilli powder, fennel seeds, cumin seeds, ajwain, dry ginger powder, and salt until thickened.
3️⃣ Prepare Potato Filling: Heat oil in a pan. Add dabeli masala and tamarind chutney. Stir well. Add mashed potatoes and mix until the masala coats the potatoes.
4️⃣ Make Green Chutney: Blend mint, coriander, green chillies, ginger, raw mango, salt, and water into a smooth paste.
5️⃣ Prepare Spiced Peanuts: Toss roasted peanuts with dabeli masala and lemon juice.
6️⃣ Assemble the Dabeli: Slice pav buns and spread tamarind chutney on one side and green chutney on the other.
Add the potato filling, onions, spiced peanuts, sev, pomegranate seeds, and coriander.
Toast the assembled pav with butter until golden and crisp.
