In this episode, Liz is featuring Rush Creek Reserve from Uplands Cheese! This savory cheese from Dodgeville, Wisconsin is made with milk from cow’s grazing on fall grass and winter hay. Each cheese is wrapped in spruce bark, which gives shape to the cheese and imparts a subtle woodsy flavor. As it ages, these molds help soften the interior to a custard-like perfection.
