Our wonderful Cheese Lady, Liz, will be featuring some of her favorite cheeses from our Specialty Cheese Department, her favorite ways to serve them, and some great drink pairs in this fun video series! In this episode, Liz is featuring Rush Creek Reserve from Uplands Cheese! This savory cheese from Dodgeville, Wisconsin is made with milk from cow’s grazing on fall grass and winter hay. Each cheese is wrapped in spruce bark, which gives shape to the cheese and imparts a subtle woodsy flavor. As it ages, these molds help soften the interior to a custard-like perfection.
