Tea egg 茶葉蛋
ingredients:
6 to 8 eggs
500ml water (enough water to fully submerge the eggs)
1/2 a cinnamon stick
8 to 10 star anise 八角
2 tsp salt
1 tbsp light soy sauce or as desired to taste
1/3 to 1/2 cup pu-er tea, oolong tea or any red tea (if you are using a stronger tea you’ll need less and depending if you prefer a stronger taste tea egg or lighter)
1 tbsp dark soy sauce (optional for colouring)

Tips:
At all times ensure there is enough liquid so that the eggs are fully submerged. Add water when necessary
Making more cracks in the eggs allows more flavors to marinate through
You can reuse the liquid to cook a new batch of eggs.
