Farmers are harvesting sorghum, a versatile grain crop used for food, animal feed, and biofuel. The timing of the harvest is critical and depends on the intended use. For grain sorghum, harvest occurs when the seeds are fully mature and hard, and the moisture content drops to around 20-25%.

The plants have typically turned a golden brown or reddish color. On large farms, this is done with a combine harvester fitted with a grain head, which cuts the stalks, threshes the seed from the panicles (seed heads), and collects the grain.

The remaining stalks (stover) are often left in the field as residue or baled for forage or bedding. For silage or forage, the entire plant is harvested earlier while still green and chopped. The harvested grain is then dried further, cleaned, and stored.
