How to make a delicious, flavorful and healthy pork roast.

Ingredients:

1. 4 pound roast. Lightly salt and peppered.
2. 1 teaspoon- dried thyme.
3. 3/4 teaspoon dry mustard.
4. 1 package-onion soup mix.
5. 2 cups-water.
6. 1 onion- thin sliced.
7. 3-4 Tablespoons- brown sugar.
8. 2 cloves- garlic- smashed.
9. 1/2 cup- fresh apple cider.
10. 2-3 cups- rinsed and drained sauerkraut.

Preheat oven to 325 degrees. Use rack in the middle.

Directions:

1. Remove excess fat from roast.
2. Lightly salt and pepper roast.
3. Put 2 Tablespoons of oil in preheated Dutch oven, over medium heat.
4. Sear / brown roast on all sides.
5. Place sauerkraut, onion and garlic on and around roast.
6. Sprinkle on onion soup mix, brown sugar, dry mustard and dried thyme.
7. Add 2 cups water and 1/2 cup fresh apple cider. Cover tightly with lid.
8. Slow roast in oven at 325 degrees, for 2-3 hours or until tender.
9. Remove from oven and carefully and place roast on platter.
10. Tent with foil- to cool before serving.
