Chocolate cupcakes

Ingredients
* 200 g (1 cup) sugar
* 175 g (1½ cups) flour
* 50 g (½ cup) unsweetened cocoa powder
* 1½ tsp baking powder
* ½ tsp salt
* 1 extra-large egg
* 125 ml (½ cup) milk
* 75 ml (¼ cup) canola oil / melted butter
* 1 tsp vanilla extract
* 125 ml (½ cup) boiling water( add 1 tsp of Coffee)
Bake at 350F in a preheated oven for 7-10 minutes, depending on your oven temp and size of the cupcake.



Eggless Scones

2½ cups all-purpose flour (300g)¼ cup granulated sugar2½ teaspoons baking powder½ teaspoon salt⅓ cup cold unsalted buttercubed (76g)
175 ml lukewarm milk( add 1 tabsp lemon juice , set aside for a minute)
½ cup mix-ins dried currants or cranberries, chocolate chips, berries, nuts (optional)
1 teaspoon vanilla extract1 tablespoon coarse sugar to sprinkle
Egg wash or yogurt to brush for golden top.

Baked @400F preheated oven for 20 minutes ( varies according to oven temp & scone size)
