Mom makes us some delicious spice cake mix cookies filled with pumpkin pop tarts and white chocolate. This is a super simple recipe that is sure to please everyone in the family that loves pumpkin and white chocolate. This is truly an amazing combination.

Recipe
Preheat oven to 350

In mixing bowl combine

1 box of spice cake mix
2 large eggs
1/2 cup vegetable oil.

Once mixed well add the following

4 pumpkin pop tarts cut into 1" squares
1 cup white chocolate chips

mix well

make into 1.5" balls and place 2" apart on a baking sheet. Bake for 12-15 minutes. Let cool on baking sheet for 5 minutes then transfer to a wire rack to cool. These cookies will have a lot more flavor when cool compared to being warm.
