Pea and mint soup recipe that is healthy and delicious! By adding mint to this pea soup recipe, it adds a freshness and balance. My boys used to love this pea soup when they were growing up. Occasionally we would turn it into pea and ham soup, by removing the mint and adding chopped ham, they would also love it when I put croutons on it.
