In our Chef Special Series, we cooked the classic Chicken Tikka Biryani! It is a mixture of 2 famous recipes. Biryani & Tikka Recipe. Chicken Biryani was first cooked by the Mughals in Persia from early 1800s.

Tikka is a marinated (BBQ Charcoal) chicken. Bone or Boneless, it tastes amazing with the combination of Chicken Biryani (which needs no introduction)

Ingredients & Recipe:

4 Tbsp Vinegar (Sirka) (For The Chicken Marination)
1 Tbsp Laal Mirch (For The Chicken Marination)
1 Tbsp Salt (For The Chicken Marination)
1 Tbsp Black Pepper (For The Chicken Marination)
1 Tbsp Garam Masala (For The Chicken Marination)
1 Tbsp Ginger/Garlic Paste (For The Chicken Marination)
1/4 tp Food Colour (Red) (For The Chicken Marination)
2 Tbsp Cooking Oil (For The Chicken Marination)
1 kg Boneless Chicken (For The Chicken Marination)
1 Charcoal ( For The Chicken Marination )
1/2 Cup Cooking Oil (For The Biryani Masala)
2 Chopped Onions (For The Biryani Masala)
4 Tomatoes (For The Biryani Masala)
1/2 Tsp Salt (For The Biryani Masala)
1 Tsp Red Chilli Powder (For The Biryani Masala)
1/2 Tsp Haldi (For The Biryani Masala)
1 Tsp Dhania Powder (For The Biryani Masala)
1 Tbsp Tikka Masala ( For The Biryani Masala)
1 Cup Yogurt (For The Biryani Masala)
1 Cinnamon Stick (Daal Cheeni) (For The Rice)
2 Bay Leafs (Tej Patta) (For The Rice)
2 Star Anise (Badian Phool) (For The Rice)
4 Cardamom (Elaichi) (For The Rice)
2 Black Cardamom (Bardi Elaichi) (For The Rice)
1 Tsp Salt (For The Rice)
1 & 1/2 Cup Rice (For The Rice)
1 Tbsp Kewra Water (For The Rice)

Marinating Tikka Chicken:

In a bowl mix Vinegar, Laal Mirch, Salt, Black Pepper, Garam Masala, Ginger Garlic Paste, Red Food Colour, Cooking Oil and Boneless Chicken. Mix everything well and marinate the chicken. Cover and chill in fridge for 1 hour. Shallow fry the chicken for 20 mins give coal smoke for a few mins and set aside.

Biryani Masalas:

In a pot add Onions in heated oil and fry till translucent. Add tomatoes, Red Chilli, Salt, Haldi, Dhania Powder and Tikka Masala. Cook until tomatoes are soft. Mix and add Yogurt then mix well and cook until oil separated. Add BBQ chicken in the mixture.

How to cook Biryani Rice:

In a separate pan add Cinnamon Stick, Bay Leafs, Star Anise, Cardamom, Black Cardamom, and Salt in hot water. Mix it well and add Rice in the pan. Bring it to boil and cook until 80% done.

Everything is done for you to assemble Biryani Layers!
