10 Holiday Hosting Tips & Tricks from a Private Chef

#1 Write A Smart Menu - if you want all of your food to come out done and warm at the same time, don't pick 8 dishes that need to be finished on the stovetop last minute. Write a menu that utilizes what you have.

#2 Know Your Resources - A crockpot or Instant pot can be a great tool for hot-holding mashed potatoes or stuffing. Set your oven to 170F to use as a warming box while you finish other dishes. Create a list with every dish, its cooking time, and the ideal serving temperature. This helps coordinate oven and stovetop use.

#3 Prepared Foods Are Your Friend!: Put out some delicious @eatdivina olives or grape leaves for guests to snack on while you finish cooking. Nice jams are a beautiful and festive accompaniment to cheese and charcuterie

#4 Pre-prep Ingredients: (Mise en Place!) chop, measure, and LABEL as much as you can ahead of time. I like to write what an ingredient is and the dish its going in on the label (e.g. Pomegranate Seeds // Salad). Writing out a prep list with things you can cross off is helpful.

#5 Batch Tasks: Instead of prepping per recipe, batch your tasks (e.g., chop all veggies together, then move on to herbs, etc.). If every recipe calls for grated garlic, do it all at once, or whack a bunch in a mini food processor to save time. (For this to work, you need to thoroughly read through all your recipes and know the tasks! Take notes! Make lists!)

#6 Use Sheet Pans for Efficiency: Roast multiple ingredients on sheet pans, keeping them separate with foil dividers if needed.

#7 If your fridge is getting crowded, prep coolers with ice packs to free up space

#8 Identify Serving Vessels: Place a sticky-note with the name of each dish on the platter or bowl you plan to serve it in to save last-minute scrambling. If you can, place designated serving spoons or tongs in each bowl as well

#9 Delegate Table Setting: Enlist friends or family to set the table, pour drinks, and handle the non-cooking details.

#10 Have Fun! The holidays are about celebration. There's a good chance you don't have a professional food critic at your dinner table. Stay hydrated (and perhaps libated), put on good tunes, and enjoy the occasion with your loved ones
