CCCA is proud to present “Pass on the Recipes!”, a project which we invite different senior chefs to share and demonstrate their family secret recipes to viewers of all generations that have been passed down to them from their ancestor or special recipes that can highlight special traditions from their own cultures.

In this episode of “Pass on the Recipes”, our Host Jim Gordon introduces Chef Shayne May, who learned to cook Italian recipes created by his famous father that were cherished and documented in the family’s recipe book. Recently the family traditions and book of recipes were passed on to Shayne’s daughter to carry on her grandfather’s legacy.

In this episode, Chef Shayne prepares for the guest audience, a recipe he created “Luxardo Black Sambuca Prawns”. His entertaining story-telling while cooking, captures the attention of the audience when he flambé the prawns soaked in Sambuca, “this burns off all the alcohol while leaving a great flavourful sauce” says Shayne. He artistically places the Prawns on a serving dish and then drizzles the sauce over the Prawns, which he describes as ‘liquid gold’, and tops off the serving with slices of French bread to dip into the sauce. The guest audience gets to sample the Luxardo Black Sambuca Prawns and raved about the exquisite flavour.
