After several previous failed attempts to make it to Catalina in the Tailchaser, the weather finally cooperated enough for us to make the channel crossing. After good bass fishing and a wide open bonito bite, we were even lucky enough to connect with a big yellowtail to cook up for dinner. Hope you guys enjoy the video! ↓↓↓RECIPE BELOW ↓↓↓
After a slightly bumpy ride to Catalina, we made it to the quarry area on the frontside and had some good bass fishing. After fishing there for a little while, we went around the East end and got into a wide open bonita bite. While fishing for bonito, Justin got a hard bite from a yellowtail on his SP minnow that quickly broke the line on his 200 size baitcaster. He also got a big swirl next to his jig from a yellowtail trying to eat it. Since there seemed to be a few scattered fish in the area, we dropped in some diving trolling plugs and drove around for a bit. 10 minutes and 3 bonita later we got a huge take and connected with a big yellowtail. We fought the fish for about 10 minutes before getting it in the boat. Once we got home and cleaned the fish, we filmed this video and made a great sushi roll. For the recipe, please see below:
RECIPE:
Ingredients-
➤Fresh yellowtail
➤Snow crab legs
➤Nori (seaweed)
➤Sushi rice (Steamed white rice, rice vinegar, sugar, salt)
➤White onion
➤Asparagus
➤Tempura batter (tempura batter mix and cold water)
➤Sesame seeds
➤Spicy miso mayo (miso paste, mayonnaise, sriracha)
➤Vegetable oil
Steps-
1) Cook 2 cups white rice and chill. Once chilled, mix with 1/2 cup rice vinegar and 1/4 cup sugar, salt to taste.
2) For sauce, add equal parts miso paste and mayonnaise into bowl, add sriracha to taste.
3) Cut onion into thin strips and blanch in boiling water 4 minutes, strain and dry, and fry in vegetable oil until crispy.
4) Mix tempura batter with cold water, coat whole asparagus, and fry in oil 1 minute.
5) Shell crab legs (can also use imitation crab/crab salad)
6) Sear yellowtail in hot pan for 10 seconds on one side, or use torch.
7) Assemble rice and nori onto sushi mat covered with plastic wrap, and flip.
8) Add strips of raw yellowtail, tempura asparagus, and crab meat, and roll.
9) Remove plastic wrap, add seared yellowtail, replace plastic, and cut into 8 equal pieces.
10) Remove plastic again, top with sesame seeds, fried onion, and miso mayo.
