Encountering a pear tree at the repository still holding fruit, we taste it. No dessert pear, clearly. Rather, a 'wild' or 'seedling' pear of Asian heritage with, our palettes suggest, precisely the bittersweet qualities lending it extraordinarily well to making pear perry (cider). Joseph Postman, senior scientist at the USDA repository happened to be close by. Perhaps only one hobbyist in the PNW has so far cottoned on to this narrative, he tells. Apparently, a dizzying array of asian pear seedlings at the repository, originally assembled for their potential as rootstocks, but also very well suited to making pear perry, remain as yet, completed untested and untasted by a burgeoning army of cider makers in these parts.
