This is the best Veg Galouti Kebab recipe you will find anywhere!
Galouti kebabs are the most iconic kebabs from Lucknow. The specialty of the Galouti Kebab is that it is so soft, that it melts in your mouth, and you can’t even pick it up with your hands!
But those of you, who are vegetarian, I have recreated the same Galouti Kebab in a vegetarian version, and you can experience the same taste, texture and flavors in a Veg Galouti Kebab now!
These Veg Galouti Kebab are made of mushrooms, Mushrooms have an umami flavour, a meaty flavor, and that is why they become the ideal choice to make a veg Galouti Kebab.
I have also share d the recipe of a Kebab masala that will add all the flavour to the kebabs. And you can use the same masala to make any other kebab too!

Recipe :
Veg Galouti Kebab
Preparation time: 30 minutes
Cooking Time: 20 minutes
Serves: 3-4

Ingredients:
For the kebabs:
400g Mushrooms
15 cashew nuts
3 medium sized onions
6-7 cloves garlic
1 ½“ ginger
Salt to taste
1 tsp red chili powder
3 tbsp ghee
2 tbsp gram flour
1 tsp kewra water
1 tsp cardamom powder
Prepared kebab masala

Kebab Masala:
1tsp cumin seeds
1 tsp fennel seeds
1tbsp coriander seeds
1 tsp poppy seeds
1 tsp black pepper corn
1/8 nutmeg
1 flower mace
2” cinnamon stick
1tsp dried rose petals
6 green cardamoms
1 dried red chili
2 bay leaves
½ tsp caraway seeds
1 star anise
1tsp ghee

Method:
Heat the ghee. Add the cashew nut and fry till golden and remove.
Finely slice the onions and fry till golden and remove.
Roast the gram flour till fragrant and remove.
Boil the mushrooms for 7-8 minutes and drain.
Dry roast the cumin, caraway, coriander and fennel seeds till lightly fragrant.
Heat 1 tsp ghee and add the cardamoms, nutmeg, mace and allow to sizzle.
Add all the other ingredients for the kebab masala, cashew nuts, fried onions and grind to a very fine paste with little water.
Grind the drained mushrooms to a fine paste.
Mix together the two pastes, add salt to taste, red chili powder, cardamom powder, roasted gram flour and mix well.
Sauté the paste for 3-4 minutes till it dries up a bit.
Remove from heat.
Heat ghee on a pan.
Shape the mixture into small patties and cook over low heat till crisp on one side.
Flip and cook till crisp on the other side too.
Remove and serve hot with paratha, chutney and onions.
