MUTTON PEPPER FRY
A fiery, fragrant South Indian delicacy where tender mutton is slow-cooked and roasted with crushed black pepper, curry leaves, and rustic spices. It’s bold, rich, and packed with flavor.
INGREDIENTS:
For the Marinate:
• 1 cinnamon stick
• 5–6 cloves
• 1 tbsp fennel seeds
• 1 tbsp coriander seeds
• ½ tsp turmeric powder
• 2 tbsp red chilli powder
• ½ cup water (for grinding)
• 1 kg mutton
• 1 tbsp garlic paste
• 1 tbsp ginger paste
• Salt to taste
For Cooking:
• ½ cup oil
• 10–12 fenugreek seeds
• 1 sprig curry leaves
• 2 medium-sized onions, finely chopped
• 3 tomatoes, chopped
• ½ tsp salt (for tomato mixture)
• 1 litre water
• 1 tbsp black pepper
METHOD:
For Marinade:
Take 1” cinnamon
5-6 cloves
1 tbsp fennel seeds
1 tbsp coriander seeds
1/2 tsp turmeric powder
2 tbsp red chilli powder
Grind together with 1/2 cup water
Take 1 kg mutton
Add 1tbsp Garlic paste
1 tbsp ginger paste
Add the ground spice paste
Add salt to taste
Massage everything well
Heat 1/2 cup of oil
Add 10-12 fenugreek seeds
Add 1 sprig of curry leaves
Add 2 medium sized onions finely chopped
Sauté till they are golden in colour
Add 3 tomatoes chopped
Sauté it till the tomatoes are mushy & cooked
Add 1/2 tsp of salt to it
Mix it well
Add the marinated mutton
Seer it on a high flame for 4-5 minutes
Add 1 lt water to it
Cover and cook on a medium to low flame till the meat is done
Coarsely crush 1 tbsp black peppercorns, add it to the Mutton
Serve
FRENCH BEANS WITH MOONG DAL SABZI
A wholesome South Indian-style sabzi made with tender French beans and protein-rich moong dal, slow-cooked with coconut oil, curry leaves, green and red chillies, and finished with freshly grated coconut. Light, nourishing, and packed with home-style flavour — perfect with roti or rice!
INGREDIENTS:
• 3-4 tbsp coconut oil
• 1 tsp Mustard Seeds
• 4 dried red chillies
• 3 green chillies, slit
• 1 sprig curry leaves
• 1 cup moong dal (soaked for 4–5 hours)
• ½ kg French beans, chopped
• ½ tsp turmeric powder
• Salt to taste
• ½ cup water
• 1 cup fresh grated coconut
METHOD:
Heat 3-4 tbsp of coconut oil
Splutter 1 tsp of mustard seeds
Add 4 red chillies and 3 green chillies slit
A sprig of curry leaves
Add 1 cup of soaked moong dal (soaked for 4-5 hours)
Sauté it for a few seconds
Add 1/2 kg french beans
Add 1/2 tsp of turmeric powder
Mix it well
Add salt to taste
Add 1/2 cup of water
Mix it well
Cover & cook till the beans and moong dal are cooked
Add 1 cup of fresh coconut grated
Mix well
Serve
