☕️ About this recipe:

They’re the mini version of the traditional tray-baked Mexican 3 milk cake, super portable and perfect for sharing at parties and gatherings. We’ll eat them anywhere… Laura may have scoffed one in the car on the way to Sarah’s parent’s place one night!

Both of our families love them as a delicious homemade dessert that is easy to tweak with different flavourings and toppings for a whole different experience every time. This recipe is up there as the most requested birthday dessert (right alongside pavlova of course!)

🥒 Ingredients:

For the Egg Yolk Mixture:
3 egg yolks
6 tbsp caster sugar / superfine sugar / 80 g / 2.82 oz
4 tbsp milk, full cream / 60 ml / 2.02 fl oz
1 tsp vanilla essence
½ cup self raising flour / 65 g / 2.29 oz
¼ tsp salt

For the Egg White Mixture:
3 egg whites
2 tbsp caster sugar / superfine sugar / 25 g / 0.88 oz

For the Milk Syrup:
6 tbsp evaporated milk / 90 ml / 3.04 fl oz
1/3 cup sweetened condensed milk / 100 ml / 3.38 fl oz
3 tbsp thickened cream / heavy cream

For the Topping:
1/2 cup thickened cream / heavy cream
1 tbsp icing sugar / powdered sugar
12 strawberries sliced
1 tsp cinnamon

👩‍🍳 Recipe Steps:

1:19 Gently fold egg whites into egg yolk mixture.
1:34 Pour mixture into cupcake moulds, bake 20 mins, cool down.
1:52 Make the three milk syrup.
2:07 Pierce cupcakes with skewer, pour syrup over top.
2:40 Whip the cream, spread out over top of each cupcake.
3:04 Top with strawberries, sprinkle with cinnamon.
